- An egg
- 1 ½ cups milk
- 2 teaspoons vanilla extract
- 2 cups self-raising flour
- ¼ teaspoon bicarbonate of soda
- 1/3 cup caster sugar
- 25 g butter, melted
In a jug, put the egg, milk, and vanilla together and whisk them together. Sift the flour and bicarbonate of soda into a bowl and stir the sugar in. Proceed to making a well in the centre and pour the milk mixture. Whisk until just blended. Heat a large non-stick frying pan or griddle over medium heat. Spread some butter on top, or grease it. Using a scoop dispense ¼ cupful of mixture per pancake, cook 2 pancakes for 3 to 4 minutes or until you see bubbles on the surface. Flip and cook for another 3 minutes. Repeat this process with the remaining mixture, making sure to brush the pan with butter between batches. Serve with some maple or chocolate syrup.
