The Best Fluffy Scottish Pancakes

Have you seen a stack of pancakes that looked so tall you wondered what’s inside? Search no further, they are the Scottish pancakes. Fluffy and delicious and made in 20 minutes these pancakes will soon become your favorite!



  •  200g (plus 2 teaspoons) all-purpose flour
  •  1 tablespoon baking powder
  • 2 eggs
  • 300 ml (1-¼ cups) milk
  •  Pinch of salt
  • 1 teaspoon ground cinnamon
  • 1 tablespoon sugar
  • Butter (for the pan)


  •  Honey
  • Maple syrup
  • Whipped cream
  • Fresh berries


In a large bowl, mix the flour, baking powder, salt, sugar and cinnamon and whisk to combine. With an electric mixer beat eggs and milk on medium high until eggs are frothy, or around 15 seconds. Pour the dry ingredients into the wet mixture and whisk everything together until just incorporated. Set aside and allow the batter to thicken for about 15 minutes. Add a teaspoon of butter to a frying pan and melt over medium heat (don’t forget to add butter between batches).Using a scoop pour around 1/8-cup of the batter into the pan and cook until it starts to rise up, as soon as the bottom is nicely golden, flip over and continue to cook until the other side is golden brown. Serve warm, with honey or maple syrup and fresh berries. Enjoy!
