Fresh Lemon Poppy Seed Pancakes

  • 1 ½ cups white whole-wheat flour
  • ¼ teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 tablespoon poppy seeds
  • ¼ teaspoon salt
  • 1 tablespoon sugar
  • 1 ½ cups buttermilk
  • 1 large egg
  • 1 cup part-skim ricotta cheese
  • 2 tablespoons canola oil
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • Maple syrup for serving


In a large bowl mix the flour, baking soda, baking powder, poppy seeds and salt. In a separate bowl beat the egg and pour in the buttermilk, ricotta, oil, lemon zest, sugar and vanilla. Make a well in the center of the dry ingredients, and pour in the wet ingredients, whisk together until well combined. (But still don’t over mix). Allow the batter to sit for 15 minutes. Heat a large nonstick skillet or griddle over medium low heat and spray some cooking spray on top. Using around ¼ cupful of the batter pour it onto the griddle (but make sure you don’t stir it again, it should be a bit sticky) Cook until bubbles appear on the surface. Flip and cook for another minute or two. Repeat with the remaining batter, coating the pan with cooking spray and reducing the heat as needed. Serve warm with maple syrup.
