Heartwarming Hazelnut Pancakes

Pancakes filled with pure hazelnut taste. They are triple hazelnut in fact: inside they have hazelnuts and hazelnut non-dairy beverage, plus chopped hazelnuts on top paired with chocolate syrup. Hazelnuts add a healthy twist to these fluffy and delicious pancakes, given the fact that they are full of protein, dietary fiber and vitamin E. To make the pancakes even healthier substitute the all-purpose flour with whole wheat and the sugar with honey.


1 cup hazelnuts

2 cups all-purpose flour

3 tbsp sugar

½ tsp salt

1 tsp baking powder

¾ cup hazelnut beverage

1 egg

1 tsp vanilla extract

½ teaspoon cinnamon

2 tbsp vegetable oil


In a large bowl, combine the flour, baking powder, sugar and salt. In a smaller bowl, combine the eggs, hazelnuts, hazelnut beverage, vanilla extract, cinnamon and butter. Add this mixture to the flour mixture and stir until smooth.

Heat a greased griddle over medium heat. Pour ¼ cup of the batter per pancake onto the griddle. Cook until bubbles appear on top of the pancake. Flip and cook for about 2 more minutes.

Toast some hazelnuts in a baking pan in a 350° F oven until golden or for about 10 minutes. In a small bowl, combine the chocolate syrup and toasted hazelnuts and pour over the pancakes.
