Mango Pancakes with Vanilla Syrup

Ready for some superfood? How about superfood pancakes? We will use fruit, of course, but not just any fruit. We will use a delicious tropical fruit full of nutrients and low in calories, fat free and cholesterol free. Plus, this fruit has more than 20 minerals and vitamins. Ring a bell? Mango. Let’s make some fluffy, easy and quick pancakes and top them with home-made vanilla-and-honey syrup. Extras: fruit slices and coconut flakes or nuts.


1-1/4 cup flour

1-1/4 teaspoon baking powder

1 tablespoon sugar

1/4 teaspoon cinnamon

1/4 cup butter

1 egg

1 cup milk

1 1/2 cup diced mango

Ingredients for the vanilla syrup

3/4 cup honey

1/2 cup butter

1/2 teaspoon vanilla extract


In a bowl, whisk the flour, baking powder, cinnamon and sugar. Combine the egg, milk and melted butter and mix until smooth. Add the wet ingredients into the dry ones. Add in the mango pieces and mix.

Heat a griddle greased with butter over medium heat. Pour ¼ cup measure per pancake onto the griddle and cook until golden brown. Turn and cook the opposite side for 1-2 minutes.

Prepare the syrup. Heat the honey and butter until the butter melts, stirring constantly. Add the vanilla at the end.

Pour over the pancakes and add fruit slices and nuts or coconut flakes.
