If you like chocolate pancakes you will love this chocolate pancake cake. Take your simple classic pancake recipe and enrich it with a chocolate filling full of flavors from the almond praline and the brandy cream inside. Decorate with some whipped cream and put a candle on top to wish someone you love a very happy birthday morning.
For the Pancakes
1 cup flour
1 cup milk
2 tablespoons butter
For the Praline
½ cup caster sugar
1 cup blanched almonds
½ teaspoons salt
For the Chocolate Sauce
1 cup dark chocolate
¼ cup brown sugar
3 tablespoons butter
1 cup milk
½ cup double cream
2 tablespoons brandy
whipped cream for serving (optional)
Prepare the Pancakes
Sift the flour and salt into a bowl and make a well in the center. In another bowl mix the milk, butter and eggs and pour them into the well, whisking until just combined.
Heat a griddle over a medium heat. Pour about ¼ cup per pancake onto the griddle. You might want your pancakes a bit thinner and bigger for this recipe, so swirl the batter around the griddle to spread it.
Cook the pancake for about 2 minutes on each side until golden brown.
Prepare the Praline
Place the caster sugar with 2 tablespoons water in a pan and dissolve it over medium heat. Cook it until it becomes light brown. Add the almonds and salt and keep cooking for about 1 minute.
Place the praline on a greased baking sheet and let it cool and harden. Then chop using a food processor.
Prepare the Chocolate Sauce
Combine all the ingredients in a saucepan placed over a pan filled with boiling water. Stir until smooth. Remove and let it cool.
Stack the pancakes on top of each other spreading chocolate sauce and pralines over each pancake. Finish with a pancake.
Heat the oven to 350 degrees F. Cover the cake with foil and bake for about 20 minutes.
Cover the cake with the remaining chocolate sauce and pralines and serve with whipped cream.
