Quick and Fluffy Buttermilk Pancakes

I don’t know anyone who doesn’t love fluffy pancakes. Seriously, I don’t care whether it is salty or sweet, as soon as a pancake is fluffy, it is my type of pancake! I love regular pancakes, banana pancakes, red velvet pancakes, virtually any kind of pancake. But my all time favorite are of course the buttermilk pancakes.



  • 1⅓ cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3 tablespoons sugar
  • 1 teaspoon kosher salt
  • 1¼ cups buttermilk
  • 2 tablespoons unsalted melted butter
  • Vegetable oil (or some cold butter) for griddle
  • Pure maple syrup


Sift the flour into a large bowl. Add sugar, baking powder, baking soda, and salt. In a separate medium large bowl whisk the buttermilk, eggs and butter. Stir the wet mix into the dry ingredients until they blend, don’t worry if there are some lumps.  Heat a non-stick skillet on medium heat and start scooping around ⅓ cupfuls of batter into the skillet. Heat each side for 3 minutes, or until golden brown. You can serve these pancakes with some more butter, maple syrup, or just sprinkle some blueberries on top. You are in for a treat!
